Concept

This
wine is non vintage because it is a blend of our best Châteauneuf-du-Pape
cuvées from different vintages, aged in our traditional oak
casks. Therefore the consistent high quality from one year to another
explains its worldwide success: LA FIOLE DU PAPE is one of the most
sold Châteauneuf-du-Pape bottles in the world. |

Grenache gives the wine its structure, roundness and mellow quality

Vinification

| |
The
harvest is manual and the grapes sorted and selected by hand. The
grapes qre put in the vat whole as opposed to crushed to give the
wine a better tannic structure.
The different wine varieties are vinified seperately
according to the variety. The maceration process lasts 15 days at
a controlled temperature of 30°C. Malolactic fermentation occurs while
the wine is being stored in steel vats for two months.
The produce of the different grape varieties
is then blended together. The wines are then left to age for from
one to five years in oak barrels of 40 to 50 hectoloitres. A rigorous
selection and careful blending of different vintages follows, the
aim of which is to obtain consistent organoleptic characteristics
and an average age of at least three and a half years at the wine's
exportation. The wine is then bottled. |

Characteristics

A
ruby robe made brilliant by its iridescent reflections shows that
this wine is mature. The nose of dried fruit, wood, truffles, venaison,
and spice is complex and warm and balances perfectly. On the palate,
this wine is surprising in its depth and its tannic finish.
Our advice :
This wine, always ready to drink anytime the consumer opens the
bottle, will even more improve within 3 or 4 years and can be easily
kept for more than 10 years.
To
be served at a temperature of 17°C. Goes very well with games,
jugged hare or boar, meats in sauce, strong and matured cheeses.
